While most Japanese kitchen knives come in single bevel edges, these feature double bevel edges applied in an even angle from both sides. Western style features squared corners.

Important Notes: Please take note that carbon steel knives will rust as it is a naturally occuring phenomenon. Although it may not rust as much as carbon steel, stainless steel knives will also rust slightly. Rusting especially occurs for brand new knives. But don't worry. You can prevent your knife from rusting by giving them some extra care.
